Cucumber, Salmon and Valbreso® Cheese Bites

Ingredients:

  • 1 Valbreso® Cheese Chunk (7 oz)

  • 1 lemon

  • 12 olives

  • 1 chilli peper

  • 8 dill branches

  • 6 tbsp extra virgin olive oil

  • 400g salmon fillet

  • 400g cucumber

  • salt, pepper

  • 24 wooden mini-skewers

Directions:

  1. For fragrant oil: Grate the lemon zest. Slice the olives, the chilli pepper and dill branches. Mix all together with 2 tbsp of olive oil. 
  2. Cut the Valbreso® Cheese, salmon and cucumber into dices of about ½ inch.
  3. Cook the salmon in a non-stick skillet with the remaining olive oil for 1 minute on both sides.
  4. Mix the diced cucumber and salmon with the fragrant oil. Season with salt and pepper.
  5. Ping on each mini-skewer a dice of cucumber, a dice of salmon and two dices of Valbreso® Cheese.
  6. Serve with a drizzle of lemon juice

Tip:

Replace cucumber with watermelon.
