Cucumber, Salmon and Valbreso® Cheese Bites
Ingredients:
- 
1 Valbreso® Cheese Chunk (7 oz) 
- 
1 lemon 
- 
12 olives 
- 
1 chilli peper 
- 
8 dill branches 
- 
6 tbsp extra virgin olive oil 
- 
400g salmon fillet 
- 
400g cucumber 
- 
salt, pepper 
- 
24 wooden mini-skewers 
Directions:
- For fragrant oil: Grate the lemon zest. Slice the olives, the chilli pepper and dill branches. Mix all together with 2 tbsp of olive oil.
- Cut the Valbreso® Cheese, salmon and cucumber into dices of about ½ inch.
- Cook the salmon in a non-stick skillet with the remaining olive oil for 1 minute on both sides.
- Mix the diced cucumber and salmon with the fragrant oil. Season with salt and pepper.
- Ping on each mini-skewer a dice of cucumber, a dice of salmon and two dices of Valbreso® Cheese.
- Serve with a drizzle of lemon juice
Tip:
Replace cucumber with watermelon.
